Nettle Pasta

Homemade Nettle Pasta 🌿 made with freshly foraged Nettle and topped with wild blossoms, basil, toasted pine nuts, walnuts, olive oil, and shaved parmesan.

Stinging Nettle is one of Mother Nature’s super foods. It’s an amazing addition to your tea, to make pasta, or in your baked goods.

Nettle provides the body with:

Plus many more! It can even acts as an anti inflammatory!

6-7 cups Stinging Nettle (woody stems removed)

1 Large Egg

2-3 cups All Purpose Flour

Pinch of Salt

Semolina Flour

Desired pasta toppings

Add stinging nettle to a large pot of boiling water. Boil for 1 minute and immediately remove nettle from boiling water and place in ice water bath. Drain the nettle making sure to remove as much water as possible. Place the nettle in a blender/food processor and pulse until broken up. Add in the egg and blend until smooth.

Combine the flour with a pinch of salt. Make a mound of flour on a clean work surface. Start with 2 cups of flour. Create a well in the middle and pour the nettle mixture into the well. Use a fork to gently incorporate the flour into the mixture. Start with the flour closest to the nettle and work outward. Use your hands to incorporate remaining flour. If the mixture is too wet add more flour in 1/4 of a cup at a time until you have a workable dough that doesn’t stick to your hands and is stiff. Fold and work the dough for approximately 10 minutes until bouncy. Add flour as needed. Wrap the dough up and allow it to rest a minimum of 30 minutes.

Lightly flour your work surface with semolina flour. Quarter dough ball. Flatten each quarter with your rolling pin until approximately 1/4-1/8 inch thick. Use a pizza cutter to make long thin strips of pasta. Lay each strip on a piece of parchment paper and allow to dry slightly. Continue this with each piece of dough until all are rolled and cut.

To cook- bring a large pot of water to a boil. Place pasta in and allow to boil 4-5 minutes or until pasta has reached desired tenderness.

Dress pasta with desired toppings. I used olive oil, fresh basil, toasted pine nuts & walnuts, edible flowers, and shaved parmesan. Enjoy!
